Basil SorbetI recently posted Basil in my A-Z of Cookery ingredients and promised you the Basil Sorbet recipe, so here it is!
Preparation time - 2 Minutes
Cooking time - 5 Minutes
Freezing time - 41/2 Hours
1 Large saucepan
Food Processor or Hand blender
1 Litre capacity container
1 Small basil plant or 150g
11/2 Tbsp Lemon juice
1. Place all the ingredients in the saucepan and bring to the boil, whisk the syrup ensuring all the sugar is dissolved then simmer gently for 2-3 minutes.
2. Remove the saucepan from the heat and leave to cool and infuse.
3. Once the syrup has completely cooled blend it either with a food processor or a hand blender until the basil is broken right down.
4.Strain the syrup through a sieve into a suitable container, It is now ready to freeze.
